Coconut Popovers



  • 4 eggs
  • 1/2 cup of coconut milk (or other milk)
  • 1/4 teaspoon of sea salt
  • 2 tablespoons of coconut flour



  1. Preheat your oven to 425°F.

  2. Add all the ingredients to a bowl and whisk until fully blended and a bit bubbly.

  3. Fill muffin tins about 2/3 of the way with batter.

  4. Bake for about 20 minutes, keeping the oven door closed (so they don’t collapse).

  5. Cool for a moment and then devour.
