Crazy Freekeh

Freekeh

Serves 4
Ingredients

  • 1 cup freekeh
  • 1/2 cup finely diced red onion
  • 2 TBSP fresh basil
  • 2 TBSP fresh dill
  • 2 TBSP fresh parsley
  • 2 TBSP extra virgin olive oil
  • Juice of 1 lemon
  • 2 TBSP orange juice
  • 12 oz can of navy beans
  • 1 tsp Pink Himalayan salt
  • Black Pepper to taste
  • Optional: feta cheese, cherry tomatoes

Directions

  1. Add 8 cups water and the freekeh and boil until tender, about 20 minutes.  Strain.
  2. Whisk together the remaining ingredients.  Add the freekeh.  

  3. Serve over a bed of greens or with a protein.    

  4. Top with cherry tomatoes and feta for an extra kick.
